Waji's Palm Sugar Dressing

‘Palm sugar is my favorite sugar. It has that savoury tendency no other sugar can match. I use it a lot - I even add it to laksa. It just gives that amazing lift to a dish.’

Sprinkle on shredded green pawpaw.
Splash over a Thai beef salad.
Mix with red chilli oil (2 parts dressing to 1 part oil) to make an Asian dipping or topping sauce.
Sprinkle over any fried seafood.

My Palm Sugar Dressing is
Palm sugar, rice vinegar, fresh ginger and fresh onion; boiled, strained, seasoned with fish oil, cooled and hot-bottled. Refrigerate.
